Chef Marilu's Rosemary-Lemon Chicken

ROSEMARY-LEMON CHICKEN
INGREDIENTS:
1 cup olive oil
1 cup lemon juice
The zest of 2 lemons
Slices of 1 lemon
3 tbsp chopped rosemary
Salt and pepper to taste
2 lbs boneless chicken thighs
2 tbsp butter
1 cup chicken broth
PROCESS:
Combine olive oil, lemon juice, lemon zest, rosemary, salt, and pepper in a plastic bowl or zip lock bag. Set half of this mix aside.
Add the chicken to the other half of the mix and let it marinade for 30 minutes.
In a large saucepan, melt the butter, sear the chicken for 3 mins on each side. Add the chicken broth, the reserved rosemary-lemon mix, and butter. Place a slice of lemon over each thigh, cover, and let it simmer until the chicken is fully cooked.
Serve over quinoa
